2. Stevia-Sweetened Muffins

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered stevia leaf
  • 1/2 cup fresh or dried fruit (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the whole wheat flour, almond flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the applesauce, melted coconut oil, eggs, vanilla extract, and powdered stevia leaf.
  4. Combine the wet and dry ingredients, and fold in the fruit if using.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool before serving.

3. Stevia-Sweetened Salad Dressing

Ingredients:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon powdered stevia leaf
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together the olive oil, balsamic vinegar, powdered stevia leaf, Dijon mustard, and minced garlic.
  2. Season with salt and pepper to taste.
  3. Use immediately or store in the refrigerator for up to a week.

4. Stevia-Sweetened Yogurt

Ingredients:

  • 1 cup Greek yogurt
  • 1/2 teaspoon powdered stevia leaf
  • 1 teaspoon vanilla extract
  • Fresh fruit or nuts for topping

Instructions:

  1. In a bowl, mix the Greek yogurt with the powdered stevia leaf and vanilla extract.
  2. Stir until well combined.
  3. Top with fresh fruit or nuts if desired.
  4. Serve immediately.
